Vegetable oil for frying 1 tablespoon salt 1/2 tablespoon freshly ground black pepper 1/4 cup cornstarch 4 catfish fillets 4 small red peppers 1 garlic clove Cut catfish into 1 inch cubes. Dice garlic clove(s) and cut red peppers width-wise. Mix salt, ground black pepper, and cornstarch in a bowl. Coat fish pieces with mixture. Fry fish for a few minutes and then add red peppers and garlic. Place fish in 350 degree oven for 10 minutes. Then optionally broil the fish for a browner crust.
